Golden Baked Chicken Tenders (RecipeTinEats)
Note: These are so good and easy to make. I added a few extra seasonings to the dry mixture, like smoked paprika and garlic. Really came out crispy and delicious!
Chicken, Spinach & Feta Meatballs (Rachel Ray – Food Network)
Note: Delicious and easy to prep for a snack or appetizer! I sauté the onions in a pan with a little olive oil first and then add in the spinach to make a nice even mixture. And it blends better with the chicken. I also add a little extra seasoning to the chicken, including dried basil, oregano, extra pepper, etc. Add the garlic and lemon to taste. I dip them in hummus since I’m not a fan of cucumber.
